Ricotta Cheese Cake
Yesterday was my 22th birthday! As you all know, I love to cook and bake. So after I had my birthday breakfast , I made a ricotta cheese cake. Ok, I have to admit, I didn’t make the dough myself but everything else was home made! Vincent and I made a short video of the cake, unfortunately he wasn’t there yet to film me while I was baking the cake. But we hope you’ll like it anyway!
What did I use :
- 1 pack of herta shortcrust pastry (kruimeldeeg) that you have to pre bake in the oven! (follow the instructions on the pack)
- 2 eggs
- 250g of ricotta
- 50g of cream
- 100g of fine white sugar
- 1 teaspoon of vanilla essence
- 1 tablespoon of maïzena
- some raspberry sauce to finish it of!
Mix together : the egg yolk of the 2 eggs , the ricotta, cream, sugar and vanilla essence until it has a smooth texture. Then add a tablespoon of maïzena, stir until everything is mixed.
You can use a mixer to create a foam of the egg whites. Make sure it isn’t liquid anymore, almost like a mouse for your hair.

Stir the two mixtures together, nice and slowly. When this is ready, you can fill your pre baked pastry with it and bake it in a pre heated oven for +/- 25 minutes at 160°.
