Chicken Wasabi Salad

The cold weather made way for sunshine and a warm breeze so it’s time to make a fresh salad for lunch. I’m a big fan of Asian spices and flavours so I made a chicken salad with a wasabi dressing.
Ingredients for 2 people
- 250 gr chicken
- fresh lettuce
- 1/3 of a cucumber
- one chopped red sweet pepper
- curry
- Bertolli baking & cooking
- wasabi powder
- 4 table spoons of non-sugered low fat yoghurt
- 1 table spoon of olive oil
- pepper
- salt
- 3 teaspoons of cider vinegar
Cut the chicken in small pieces. Put some Bertolli baking & cooking in your frying pan. Make sure that the pan is really hot. While baking spice the chicken. You can choose how much curry powder , salt and pepper you want to use depending on your own taste. Now you can add the chopped sweet pepper. Mix it all up and when everything is ready you can put it aside.
Now chop the cucumber in small pieces and mix it with the lettuce. The cucumber will give a fresh taste to your spicy salad.
The last part of our recipe is the wasabi dressing. Take 4 table spoons of non-sugered low fat yoghurt and put it in a bowl. Add 2 and 1/2 teaspoons of wasabi powder, tablespoon of olive oil, 3 teaspoons of cider vinegar and some salt and pepper. Stir everything and have a quick taste. If you think it’s too spicy just add some more yoghurt, if you think it needs some more flavor add some more spices or wasabi powder and olive oil.
